Vegetable Bean Soup
Makes: 4 Servings
Ingredients:
1/2 Lb Assorted Beans (Kidney, Pinto, etc)
1 Vidalia Onion - Diced
1/4 Cup Low Fat Yogurt
1/8 Cup Chopped Cilantro
2 Cups Assorted Greens - Chopped
2 Cloves Garlic - Crushed
1 Tablespoons Oil
1 Tablespoons Cider Vinegar
1/2 Teaspoon Salt
1 Cups Diced Or Stewed Tomatoes
Pinch Of Black Pepper
Directions:
1. Soak beans overnight. Drain in the morning.
2. Add beans to onion, garlic, and water in a saucepan.
3. Add water and simmer.
4. Add remaining ingredients.
5. Continue to simmer until beans are soft.
6. Serve!
